Cuban tostones

Green plantain, two rounds in the frying pan and the flattened shape of Cuban tostones, also called chatinos.

Cuban tostones

Tostones begin with green plantain. The peeled fruit is cut into thick pieces, fried, flattened and fried again. That second frying gives the flattened pieces their crisp edges. 🍌

In Cuba, you’ll also hear them called chatinos. They are served with salt, sometimes with a garlic mojo, as an appetiser or alongside a meal. The green plantain is firm and starchy; flattening it between the two fryings gives each piece its broad, uneven shape.
